Catfish are caught in waterways throughout Florida but are not a commercial product. Nonetheless it’s a staple of Florida rustic cuisine.
Catfish with Caper Sauce
Yield: 4 servings
1/2 cup flour
Coarse salt and freshly ground black pepper to taste
2 tablespoons butter
2 tablespoons olive oil
4 catfish fillets
1/4 cup butter, melted
1 teaspoon capers
1/2 teaspoon Worcestershire sauce
1 tablespoon fresh lemon juice
1. Mix salt, pepper, and flour.
2. Heat butter and oil in a skillet. Dredge fish fillets in seasoned flour and fry until golden brown about 3 minutes. Turn fish over and brown the second side.
3. Heat the melted butter slowly until is just begins to brown. Stir in capers, Worcestershire sauce and lemon juice. Drizzle sauce over the fish.
